This Paleo Sweet Potato Brownies Recipe is:
OMG! I’m so excited to tell you about this Paleo Sweet Potato Brownies Recipe!!! I made these brownies last Tuesday and everyone loved them! No one knew they were paleo until I told them! Haha! I made these brownies for my boyfriend who is on a paleo diet and was really craving for some chocolaty sweets. He’s a picky one and he wanted the brownies to not be sweetened with honey or maple .. or any kind of sugar. Yes that means coconut sugar is not an option too.
So the main sweeteners in this recipe are: Sweet potatoes, unsweetened applesauce* and date paste*! Of which all of this can be found in most grocery stores. You could very easily make your own applesauce and date paste too! Like I did!
Homemade Applesauce*: Peel and core 3 apples. Slice apples into chunks and steam until soft. Blend cooked apples. (If there are leftover applesauce, keep for other use.)
Homemade date paste*: Pour 1/4 cup of boiling hot water onto 1/2 cup of dates. Let sit for 15 minutes then transfer into a blender and blend until smooth.
Ingredients for Paleo Sweet Potato Brownies Recipe:
1 cup (275g) steamed or roasted sweet potato*
½ cup unsweetened apple sauce*
¼ cup date paste*
3 tbsp coconut or olive oil
1/4 cup coconut flour
2 tbsp corn/potato starch
½ cup cacao/ corob powder
½ tsp Himalayan salt
1 tsp baking soda
Instructions for Paleo Sweet Potato Brownies Recipe
Preheat your oven to 375F.
Grease a 9” square baking pan with coconut oil and line pan with parchment paper, leaving enough extra to extend over the sides.
In the bowl of your food processor, combine oil, cooked sweet potato, applesauce, date paste and vanilla and process until smooth and creamy.
Add eggs and process until smooth.
Then add coconut flour, cocoa powder, corn flour, salt and baking soda and process until smooth.
Transfer to your prepared pan. Spread batter evenly.
Place sliced bananas on the surface of the batter.
Bake for approximately 30 minutes, or until a toothpick inserted in the center of the cake comes out almost clean.
Set brownies on a wire rack to cool for 15-20 minutes then transfer to fridge to cool completely, about an hour.
For the ganache
Heat coconut cream till a simmer and take the pan off heat.
Add chocolate to the hot coconut cream and stir till all of the chocolate is melted and ganache is smooth.
Pour and spread chocolate ganache into the cooled brownie.
Slice and enjoy!
