Hello, salted egg yolk lovers! Hello, curious person who wants to know what salted eggs are and why I’m adding them into these cookies.
Well.. if you haven’t heard of salted egg yolk before, the first thing you need to know is that they are absolutely delicious and yes, they come from eggs. They are eggs cured in loads of salt and Chinese cooking wine for a few weeks before enjoying them! Traditionally, they are eaten during breakfast (dim sum), sometimes lunch and dinner but now we are adding salted egg yolk in our pastries too!
While they are commonly found in any market or grocery store in Asia, they might be difficult to get hold of anywhere else. But if you do chance upon these special eggs, be sure to bag a few along with some sesame seeds and you’re all set to make a batch of these wonderfully golden melt-in-your-mouth salted eggs cookies. Very addictive btw.
While I used organic ingredients into this recipe, feel free to use whatever you have on hand!
270g organic cake flour (or Organic Unbleached All-Purpose Flour)
1/4 teaspoon Baking Powder
1/8 teaspoon baking soda
1 tablespoon milk powder
3 salted egg yolk
170g butter, at room temperature
1/2 teaspoon himalayan sea salt
1 egg yolk + 1 tablespoon water
2 tablespoons organic black sesame seedsInstructions:
Steam all three salted egg yolk for about 5 minutes. Cool, then mash the salted egg yolk with a fork and set aside.
In a bowl, sift together flour, baking powder, baking soda and milk powder, set aside.
Cream butter, sugar, salt in the bowl of an electric mixer until light and fluffy.
Add the mashed salted egg yolk and flour and mix till a dough forms.
Chill the covered dough in the fridge for 30 minutes.
Line baking paper on the baking pans. Preheat oven to 175oC.
Roll the dough till it’s about half inch in thickness.
Stamp out desired shapes and place them on a lined baking sheet.
Brush with egg wash and sprinkle sesame seeds over each cookie.
Bake for 20 minutes or until golden brown.
Remove and cool completely before storing in an airtight container.
