Merry Christmas and a happy new year! I have apple pie and I brought ice cream too!

Can you think of a lovelier way to greet somebody? I think that’s definitely difficult to beat. Hahaha.

I love baked fruit pies. The ones with chopped fruit tumbled in sugar, drizzled with a tablespoon of vanilla and a good layer of sweet lattice crust on top. Baked old fashioned and served hot out of the oven with a frosty dollop of vanilla ice cream on the side.

Maybe we should have pie everyday! I don’t think anyone is going to object to an idea that delicious.

I’ve always started with one scoop, working my way up to the right pie to ice cream ratio – 1:1 … yes that might mean 2 or even 3 scoops of ice cream. But it’s homemade apple pie and no it’s not an excuse. It’s a darn good reason ♥

Another reason to make this homemade apple pie recipe is that nobody ever says no and there is always more to share. Part of the joy and pleasure of baking is always sharing it with someone else and it’s especially warm if you get to share it with family.

That is my brother enjoying some pie with our pup!

easy-homemade-apple-pie-recipe-6Ingredients for double layer sweet pie crust for 9 inch pan: (skip this step if you are using store bought pie/ shortbread crust!)
3 cups (390g) all-purpose flour
1/4 teaspoon sea salt
1 cup butter softened
1/2 plus 3 tablespoons pure cane sugar
2 eggs

Ingredients for cinnamon apple pie filling:
4-5 golden delicious or granny smith apples- cored and peeled
2 tablespoons freshly squeezed lemon juice
2/3 cup organic brown sugar
1/2 teaspoon ground cinnamon
Pinch of ground nutmeg
1 teaspoon vanilla extract
1 1/2 tablespoons of all-purpose flour

Instructions for double layer sweet pie crust:  (skip this step if you are using store bought pie/ shortbread crust!)
To make the dough by hand- In a medium bowl, whisk together the flour, sugar, and salt. Using your fingers, rub the butter into the dry ingredients until it resembles crumble or sand.
Add the egg and stir the dough together with a fork or by hand in the bowl. If the dough is dry, sprinkle up to a tablespoon more of cold water over the mixture. Form the dough into a disk, wrap in plastic wrap and refrigerate until thoroughly chilled, at least 1 hour.
Cut the dough in half. On a lightly floured surface, roll each half of dough into a disc about 11 to 12 inches wide. Layer one of the dough between pieces of parchment or wax paper and store both in the fridge for 10 mins. Take 1 of the dough and slice into 2 inch strips then place back into the fridge.

Instructions for cinnamon apple pie filling:
Place a rack in the lower third of the oven and preheat the oven to 375 degrees F or 175c.
Roughly slice the cored and peeled apples into 1 inch cube chunks and add them into a large bowl.
Then add all other ingredients to the apples and mix well then set the filling aside.
Line the bottom of a 9-inch pie pan with the uncut disc of dough, and trim it so it lays about 1/2 inch beyond the edge of the pan. Put the apple filling in the pan and mound it slightly in the center.
Arrange the other dough strips into a lacttice top over the filling.
Bake the pie on a baking sheet until the crust is golden, about 40 minutes.
Serve warm or piping hot with as many scoops of vanilla ice cream

    Hey Sarah! I made this recipe in a muffin pan so they are mini and they are delicious! The entire house smells like pie and cinnamon. Highly recommend. Definitely making this recipe again. Thanks so much!!
