Mmhmmm! I love this buttery vegan cornbread recipe! I love how fluffy and pillowy it is on the inside. It’s sweet, a little salty and it has that toasty, crunchy outer layer as the muffin top! How do you describe the texture of a muffin top? I’m trying to explain but I think I’ll be better if you make a tray yourself and try not to eat everything at once. It is that delicious.
Also.. I’ve planned a day.. someday when I find someone who loves only muffin bottoms and then I would baked at least 20 muffins and only eat the muffin tops.. and of course share the bottoms with the other muffin lover. … Yes I said muffin lover but you know what I mean.

3/4 cup organic cornmeal
1 1/4 cups gluten free all-purpose flour
1 tablespoon baking powder
1/2 cup raw turbinado sugar
1 teaspoon celtic salt
2 flaxseed eggs (or two eggs if not vegan)
2 tablespoons maple (or honey if not vegan)
3/4 cup soy/ nut milk
1/2 cup Coconut oil, melted and cooled
Instructions for buttery vegan cornbread recipe:
Preheat the oven to 350°F degrees. Line a muffin pan with paper liners or spray with non-stick cooking spray. In a large bowl, whisk together the cornmeal, flour, baking powder, sugar and salt until will mixed. Stir in coconut oil, flax eggs, maple and nut milk until batter is smooth and no lumps are visible. Using a ice cream scoop, scoop the batter into the lined muffin tray and bake for 17-20 mins or until the tops are golden brown and when a toothpick is inserted comes out clean. Cool and enjoy with vegan butter and maple or honey if not vegan
