Bite-Sized Paleo Chocolate Chip Cookies
Ah ha! This is my second paleo recipe I’m putting up in this blog! Most of my paleo food babies are created for my boyfriend who is trying out a paleo diet. Check out the Paleo Sweet Potato Brownies Recipe here. He adores dark chocolate and he absolutely dislikes (simple sugars like) maple syrup, honey or table sugar and yes, that means no coconut sugar too, added into his foods! That leaves me with a few ingredients to work with that are 100% natural, organic, caveman foods like natural sweeteners- fruits, freshly squeezed juices and dates, coconut and almond flours and more high protein natural ingredients.
So in this Paleo Chocolate Chip Cookies recipe I would be using : Date paste made from Organic pitted sun- dried and unsulfured delete noir dates I got from iHerb (I’ll link the promotional coupons at the end of this post below) as the only sweetener!
Homemade date paste*: Pour 1/4 cup of boiling hot water onto 1/2 cup of dates. Let sit for 15 minutes then transfer into a blender and blend until smooth.

BITE-SIZED PALEO CHOCOLATE CHIP COOKIES
Oh and If you are wondering why my boyfriend prefers me to use dates in place of maple and honey, it’s not because he doesn’t like the taste but because the glycemic index and glycemic load of both honey and maple are higher than dates! That’s it! Oh yeah and he isn’t a fan of coconut sugar too. Something about it being overpowering and coconut-ty. I love coconuts though and all it’s delicious flavour! If you like coconuts too, you would love coconut sugar! Hehe!
Oh the delicious cookie, melted chocolate oozing over, those crisp edges and that warm and chewy middle…
Bite-Sized Paleo Chocolate Chip Cookies Ingredients:
1 cup (100 grams) blanched almond flour
1/4 cup (32 grams) Bob’s Red Mill Organic Coconut Flour
1 teaspoon baking soda
1/4 teaspoon salt
6 tablespoons (84 grams) coconut oil room temperature Viva Labs The Finest Organic Extra Virgin Coconut Oil, 16 Ounce
3/4 cup (150 grams) date paste
6 tablespoons (98 grams) natural almond butter, room temperature1
1 1/2 teaspoons vanilla extract
1 large egg, room temperature
1 1/4 cups (213 grams) dark chocolate chips, divided
Bite-Sized Paleo Chocolate Chip Cookies Instructions:
In a food processor, blend coconut oil, date paste, almond butter, vanilla and egg until combined, about 1 minute. Add almond flour, coconut flour, baking soda and salt and blend until well combined. Then stir in 1 cup (170 grams) chocolate chips.
Preheat the oven to 350 °F (175 °C) and line a baking sheet with a piece of parchment paper.
Scoop teaspoons of cookie dough and press down to flatten on the lined baking sheet, placing each cookie dough 1 inch apart.
Bake for 15- 17 minutes or until the surface of the center of the cookies no longer appears wet.
Let cool completely on the baking sheet. Store in an airtight container for up to 3 days.
